Abstract

Offal, considered a basic element of Kyrgyz cuisine, is a food frequently consumed in families' homes, especially in rural areas where the traditional lifestyle continues. In this context, dishes with offal are carefully prepared and served with great care, especially on special occasions such as special celebrations. Purpose of the study: To investigate whether ethno-restaurants in Bishkek have traditional dishes made from traditional offal products. However, in ethnic restaurants, where customer preferences and diversity are taken into account, dishes containing offal may be served in limited quantities. This may be associated with the fact that some people prefer traditional meat dishes or avoid consuming offal due to personal preferences. However, offal is considered an integral part of Kyrgyz cuisine and adds a distinctive flavor and textures to dishes. Specialized restaurants aiming to introduce Kyrgyz cuisine with its unique flavors offer traditional offal dishes such as "byzhy", "kazy-karta", "chuchuk" or "kuyruk-boor", offering diners the opportunity to experience this rich gastronomic world. The results of our research show that traditional offal dishes are limited in the menus of ethno-restaurants in Bishkek. The analysis of literary sources and scientific studies indicate that the consumption of offal in Kyrgyzstan is limited. Only a few restaurants in Bishkek focus on Kyrgyz cuisine, and traditional dishes are usually not served in these restaurants.
