Abstract

The purpose of this study is to determine the consumption profiles of the people in the Mediterranean Region and to determine the consumption habits (brand selection, providing the products in packaged / unpackaged form, under which conditions and how the products are preserved until the consumption process, which products and why the households prefer etc.) to determine whether they are effective on the microbiological quality of animal origin food products and to evaluate pathogens on the basis of provinces. For this purpose, a total of 1600 households were visited and 73 questions were asked to each household, including a total of 6 categories. One relevant food product was purchased from each household and analyzed in terms of 10 microbiological parameters in total. According to the results obtained, it has been determined that the individual demographic variables and animal product consumption habits of the consumers in the Mediterranean Region are closely related to the hygiene of the products they consume and the possible food-borne infections / toxications. In addition, according to the results obtained, it is thought that awareness raising activities, which are prepared by expert teams by the official institutions of the state and will be implemented both by using visual and printed media and will be implemented interactively by official institutions, will be extremely useful in reducing the incidence of foodborne infections / toxications.
